This is a quick piece that can be used as part of a meal or as a meal. Here are the ingredients (list to the left).
- Peel and dice your potatoes before adding them to a pan of water and boiling until soft. Once soft, drain and mash. While mashing, add the soya butter to give the mash a creamy texture.
- Heat up each portion of vegetables in a microwavable bowl, in the microwave, for 5-7 minutes. Once cooked, drain of any water. If any broccoli or cauliflower pieces are large, chopped finely.
- Add the mashed potatoes and vegetables to a mixing bowl, mix them. Add the black pepper into the mix and continue mixing. Once thoroughly mixed, take a handful of the mixture and make it into a ball before placing on a baking tray. Repeat this until all the mixture is used.
- Flatten the balls on the baking tray, or leave them as balls. Place them in the oven for approximately an hour, on Gas mark 7. Bake until crispy.
